From the teams behind Independent Birmingham, Baltic Market and Buddha Belly comes one of the city’s most exciting new destinations, Saint Paul’s Market. Designed by foodies, for foodies, this impressive new venue brings together seven independent kitchens, two feature bars and a vibrant, social atmosphere. Located in the heart of Birmingham’s Jewellery Quarter, it celebrates the city’s rich industrial heritage while offering a fresh, contemporary dining experience that reflects the area’s growing reputation as a hub for independent food and drink.

Richard Eastwood and his team at Studio r2a, having worked with us on numerous hospitality projects over the years, were well aware of our expertise in commercial kitchens, large-scale hospitality environments, and complex fit-out delivery. When it came to finding a fit-out partner for this ambitious redevelopment, Dawnvale was the team they turned to, tasked with transforming the shell of a factory into a vibrant food hall.

TRANSFORMING THE WAREHOUSE

Once a four-storey machine shop filled with heavy equipment, the building was completely reworked to create a modern, open space. Machinery was carefully removed and retained as a display feature, while the structure was stripped back and renewed to form the foundation of a vibrant new food hall that still hints at its industrial past.

BUILDING THE NEW FLOOR

A new mezzanine floor was added to increase capacity and atmosphere. With glass sides and a central walkway linking both ends of the building, it offers additional seating while keeping guests connected to the main hall below. The level also provides access to the DJ booth and facilities, maintaining flow and energy throughout the venue.

SEVEN BESPOKE KITCHENS

Dawnvale constructed two striking, container-style bars stacked one above the other, forming a visual centrepiece for the venue. Each bar features our signature ergonomic layouts designed for speed, service, and operational efficiency. Serving craft beer brewed next door, alongside cocktails and wines, the bars were meticulously planned to serve both floors seamlessly.

FEATURE CONTAINER BARS

We built and fitted out seven individual kitchen units for Birmingham’s best independent operators. Each space was constructed with full extraction and ventilation systems, bespoke counter layouts, and equipment tailored to each brand’s specific menu and service style. The result is a dynamic mix of cuisines and experiences, all supported by efficient back-of-house functionality that keeps the operation running smoothly.
